An educator with the Marquette Food Coop is holding culinary art classes at the Bonifas Arts Center in Escanaba. Last night Sarah Monte showed how to prepare holiday foods with a vegan twist.
"I think there are a lot of holiday sides that we are used to but they tend to be very heavy and rich. I'd like people to include as many new vegetables into their diet as possible and maybe start some new traditions with these dishes," Monte said.
Sides included hard boiled eggs with marinated tomatoes, braised kale with garlic and vinegar, pear and cranberry cornbread muffins and a fennel Parmesan dip with crusted bread.
The next class December 2nd is Holiday Cookie Baking.
